Mountain Man asked me to bake these Red Velvet cupcakes. His aunt makes THE BEST Red Velvet cake, so he wanted to see what I was capable of. My competitive heart gladly took on the challenge. Knowing it was a probably failure wasn't going to stop me. I bought a mixer, all the ingredients (with his help), put on my cute apron (that's been collecting dust) and got to it! I was in the kitchen for hours!!!
The batter was coming along great! I had to invent my own flour sifter though, and halfway through I realized I needed SIX tablespoons of red food coloring. So, I had to make a quick run to the store!
The icing was the most interesting part. I followed the directions and the flour and milk mixture basically turned into jello. I did my best not to squirm about it when it came time to add it in, but I hope other icing recipes are not like that! Next time I will use cream cheese frosting.
The finished product was approved by everyone I know that ate one! Mountain Man approved, but I didn't bake better than his aunt. Anyone who can make a Vegan Carrot Cake taste better than the real thing can keep her title as "The Best". Maybe I came across a new hobby? Next plan of action: Gluten free or pureed veggie sweets!

Mommy is very proud (after I got over my initial shock)! I knew you could do it, you just never wanted to try! Thanks mountain man for the dare! Don't forget, you can freeze cake- Did you save one for me?
Mom- No i didn't save one, but I will next time! now that I know I can freeze it!
